
Crockpot Ropa Vieja / AIP
NoMato Sauce and Tamarind Paste combine to bring the taste of Cuba to your dinner table. Carrots and onions bring body to the sauce while the roast cooks all day in a crockpot. Meaning "old clothes", Ropa Vieja is savory and tangy, perfect served with air fried plantain chips and cauliflower rice.

- Roughly chop onion and carrots.
- Smash garlic cloves.
- Add onion, carrots, and garlic to crockpot.
- Cut the lemon into wedges and set aside.
Cook

- Add pot roast to the crockpot, on top of the veggies.
- Add beef stock.
- Smear tamarind paste on the roast.
- Add salt and oregano.
- Add worcestershire sauce.
- Add lemon wedges.
Cook on high until fork tender, approximately 7-8 hours depending on size of roast and crockpot.
Finish

- Once the roast is fork tender, remove from crockpot and set aside.
- Add NoMato sauce to crockpot.
- Blend all sauce ingredients until very lightly chunky (use an immersion blender if available, otherwise blend in a stand blender).
- Shred pot roast with two forks.
- Return pot roast to crockpot.
- Add olives if desired.
Serve with air fried plantain chips and cauliflower rice.
