
Cantaloupe Crab Soup / AIP
This cool summer soup is a delightful blend of cantaloupe, avocado, crab and yogurt. Fully AIP compliant, this is a wonderful entree or app in hot months.
Ingredients
Prep

Cantaloupe
- Peel, seed, and section cantaloupe.
- Puree in blender until large chunks are removed and a slightly lumpy puree remains.
- You may need to do in sections depending on the size of your blender.
- Add salt and blend for an additional minute.
- Move puree to a non-reactive mixing bowl.

Avocado
- Split avocados.
- Remove pits.
- Scoop avocados into blender bowl.
- Add avocado oil, garlic powder, salt, and chicken stock.
- Blend until totally smooth.

Plating and Service
- Ladle cantaloupe puree evenly into four soup bowls.
- Bowl avocado puree into center of each bowl, dividing evenly across all four bowls.
- Spoon 2 oz. crab into center of each avocado puree.
- Spoon 1 tsp yogurt on top of each crab.
- Spoon 1/2 tsp roe on top of each yogurt.
- Garnish with finely diced scallion.
