This cool summer soup is a delightful blend of cantaloupe, avocado, crab and yogurt. Fully AIP compliant, this is a wonderful entree or app in hot months.

Prep

  1. Cantaloupe

    • Peel, seed, and section cantaloupe.
    • Puree in blender until large chunks are removed and a slightly lumpy puree remains.
      • You may need to do in sections depending on the size of your blender.
    • Add salt and blend for an additional minute.
    • Move puree to a non-reactive mixing bowl.
  1. Avocado

    • Split avocados.
    • Remove pits.
    • Scoop avocados into blender bowl.
    • Add avocado oil, garlic powder, salt, and chicken stock.
    • Blend until totally smooth.
  1. Plating and Service

    • Ladle cantaloupe puree evenly into four soup bowls.
    • Bowl avocado puree into center of each bowl, dividing evenly across all four bowls.
    • Spoon 2 oz. crab into center of each avocado puree.
    • Spoon 1 tsp yogurt on top of each crab.
    • Spoon 1/2 tsp roe on top of each yogurt.
    • Garnish with finely diced scallion.
