
Salisbury Steak / AIP
An all-time family favorite, this Salisbury Steak is savory and tasty. Served with mushroom gravy, it even sneaks in veggies. AIP and Paleo friendly.

- Shred zucchini.
- Combine beef, zucchini, cassava flour, garlic, onion, salt.
- Gently mix with wooden spoon, or by hand until thoroughly mixed.
- Heat non-stick skillet over medium heat.
- Form beef mixture into four oblong balls.
- Drop beef into hot skillet.
- Press down until ~1" thick.
- Cook until seared on one side.
- Flip the patties.
- Cook until desired doneness (4-8 minutes).
- Remove from pan to papertowels.
- Remove pan from heat.
Gravy

- Slice mushrooms.
- Dice onion.
- Return skillet to heat, add oil.
- Add mushrooms, onion, and salt to pan.
- Lower heat to medium low.
- Cook until mushrooms reduce by 50%, stirring occasionally.
- Add thyme, NoMato Sauce, and chicken stock.
- Stir and cook until sauce is warmed through.
- If sauce is too thin, thicken with a 50/50 slurry of tapioca starch and water.
- Add Salisbury Steak to sauce.
- Cover and cook on low for 10 minutes.
- Remove from heat and serve, spooning gravy over steak.
