
Chocolate Chip Cookies / AIP
Carob chips, coconut sugar, maple syrup and tiger nut flour bring a sweet, chocolatey, and nutty cookie to your plate. Fully AIP and Paleo compliant, these are the perfect ending to a healthy meal.

Dry

Preheat oven to 350 degrees.
- Combine tiger nut flour, tapioca flour, salt, sugar, and baking powder in a mixing bowl.
- Mix until fully combined.
- Add ghee to the mix.
- Blend with a pastry cutter or fork until the mix resembles sand.
Wet

- Add maple syrup to the mix.
- Add apple cider vinegar to the mix.
- Stir until well mixed.
- Add in carob chips and gently mix until the chips are distributed throughout the dough.
Bake

- Scoop onto baking sheet in 2" balls.
- Bake in over for 12 minutes, or until starting to brown around bottom edge.
- Remove from oven.
Leave the cookies on the cookie sheet. They will be very soft and will fall apart until they are cooled and set.
Once cooled, remove to serving plate or storage container.
