
Beet Tartare / AIP
A sweet and savory treat to start a special meal. Beets, coconut yogurt, and salmon roe combine for an elegant starter that all will enjoy.

- Cut tops and bottoms off three beets.
- Peel beets.
- Cut beets into ~2 inch cubes.
Cook

- Place beets into microwave safe dish.
- Cover beets with plastic wrap. Seal as tightly as possible. (This helps to steam the beets)
- Microwave until fork tender, approximately 10-15 minutes depending on microwave power. *The beets will splatter.*
- Remove beets and allow to cool for 15 minutes.
Finish

- Place the beets on a cutting board.
- Dice the beets to a consistent texture.
- Return the beets to the bowl.
- Add the juice of 1/2 lemon.
- Add salt.
- Add garlic powder.
- Gently stir until combined.
- Scoop the beets (mounded) onto a serving plate.
- Top with coconut yogurt.
- Top with salmon roe.
- Sprinkle with chives.
- Serve with plantain chips, cassava chips, or sweet potato chips.
