Beet Tartare / AIP

A sweet and savory treat to start a special meal. Beets, coconut yogurt, and salmon roe combine for an elegant starter that all will enjoy.

Prep

    • Cut tops and bottoms off three beets.
    • Peel beets.
    • Cut beets into ~2 inch cubes.

Cook

    • Place beets into microwave safe dish.
    • Cover beets with plastic wrap.  Seal as tightly as possible. (This helps to steam the beets)
    • Microwave until fork tender, approximately 10-15 minutes depending on microwave power.  *The beets will splatter.*
    • Remove beets and allow to cool for 15 minutes.

Finish

    • Place the beets on a cutting board.
    • Dice the beets to a consistent texture.
    • Return the beets to the bowl.
    • Add the juice of 1/2 lemon.
    • Add salt.
    • Add garlic powder.
    • Gently stir until combined.
    • Scoop the beets (mounded) onto a serving plate.
    • Top with coconut yogurt.
    • Top with salmon roe.
    • Sprinkle with chives.
    • Serve with plantain chips, cassava chips, or sweet potato chips.
