These southern style collard greens are cooked down with smoked meat, tamarind paste, stock, and lots of garlic.

Instructions

  1. If you are using bulk collard greens, wash thoroughly and remove stems.

    • Thinly slice onion.
    • Smash and chop garlic cloves.
    • Add olive oil to large dutch oven or medium stock pot.
    • Heat oil over medium heat.
    • Add onions and garlic.
    • Saute until onions are translucent.
    • Add collard greens.
    • Add turkey neck.
    • Add chicken stock.
    • Add tamarind.
    • Add salt.
    • Reduce heat to low and cover.
    • Cook until tender (~2 hours).
