These southern style collard greens are cooked down with smoked meat, tamarind paste, stock, and lots of garlic.

If you are using bulk collard greens, wash thoroughly and remove stems.
- Thinly slice onion.
- Smash and chop garlic cloves.
- Add olive oil to large dutch oven or medium stock pot.
- Heat oil over medium heat.
- Add onions and garlic.
- Saute until onions are translucent.
- Add collard greens.
- Add turkey neck.
- Add chicken stock.
- Add tamarind.
- Add salt.
- Reduce heat to low and cover.
- Cook until tender (~2 hours).
