Tuna Tacos / AIP

Whether you're using fresh tuna steaks, or leftovers from the grill, these seafood tacos bring all the flavor of the beach to your plate. Fully AIP compliant, the brightness and seafood flavor are perfect on a summer evening. Cassava tortillas wrap up the choice, bringing that taste of SoCal while keeping true to the elimination phase.

Instructions

Salsa

  1. Prepare the salsa at least 2 hours before service

    • dice avocado
    • dice peaches (you can leave peel)
    • dice scallions
    • dice cucumber
    • combine all diced ingredients in non-reactive mixing bowl
    • add salt
    • add lime juice
    • stir gently until mixed
    • chill in refrigerator for at least 2 hours

Toppings

    • Shred lettuce
    • Grate daikon radish
    • Set aside until service

Cook

    • Heat a sautè pan over medium high heat
    • Add avocado oil
    • Reduce heat to medium
    • Add tuna steaks
    • Flip steaks after first side is seared
    • When second side is seared, break steaks apart using spatula
    • Add tamarind sauce over the steaks
    • Continue to cook to desired doneness (usually medium rare to medium), further breaking apart

Serve

  1. Serve tuna in a cassava tortilla with salsa, lettuce, and daikon (optional).  If cassava tortillas aren't available, serve over shredded lettuce with AIP sweet potato or cassava chips for crunch.
