
NoMato Sauce / AIP
Carrots, onions, and beets combine with savory herbs to make a "tomato" sauce that can be used over pasta. This sauce has the color, texture, and savoriness of a typical Italian tomato sauce while staying nightshade free. Used with AIP approved pasta, chicken, or pork, this is also a great base for many other soups and sauces.

Prep
- Peel and cut onion into medium dice.
- Cut carrots into 1/2" thick coins.
- Peel and cut beet into medium dice.

Cook
- Heat dutch oven or sauce pan over medium heat.
- After pot is hot, add oil.
- Add in onions, beets, and carrots.
- Saute until onions are translucent and carrots are fork tender (approximately 15 minutes), stirring periodically.
- Add garlic and continue sauteeing for 3 minutes.
- Add water and lemon juice.
- Remove from heat.

Finish
- Add salt and herbs.
- Blend with immersion blender mainly smooth (slightly chunky).
- Use regular blender if immersion blender isn't available.
