Wild Game Meatballs / AIP

Savory meatballs that use a blend of meats for a earthy and savory flavor. Zucchini replaces the traditional eggs and breadcrumbs to keep the meatballs moist with a great texture. Serve with NoMato sauce for an Italian meal, or use your choice of other sauces to mix up the meal.

Instructions

Prep

    • Preheat oven to 400 degrees (f)
    • Cut the ends off the zucchini
    • Shred the zucchini using a shredder or a food processor with shredding disk.
  1. Combine

    • Gently combine all ingredients by hand until incorporated.  Do not overmix.

Cook

    • Form mixture into 40 even balls, approximately 1 oz each (golf ball)
    • Place meatballs onto a sheet pan (with rim to hold grease)

     

    • Bake at 400 degrees until cooked through, between 20-30 minutes.  Check with meat thermometer for 165 degrees.

    Serve with zoodles, AIP compliant pasta, NoMato sauce, or your choice of sauces.
