Fluffy and flakey buttermilk biscuits that are fully AIP compliant. Cassava flour, coconut milk, and AIP baking powder brings this breakfast treat to the table, while garlic adds a savory note making these biscuits the perfect side for any meal.
Ingredients
2 1/2cup Cassava Flour
1tbsp AIP Baking Soda
1tsp Sea Salt
1tsp Garlic Powder
4tsp Coconut Sugar
1/2cup Ghee (as cold as possible)
3/4cup Coconut Milk
2tbsp Apple Cider Vinegar
Instructions

Preheat oven to 420 degrees
Combine all dry ingredients in a non-reactive bowl.
Mix until combined.
Add ghee to the mix.
Using a fork, mix ghee into the dry ingredients. Continue to mix until the mixture looks sandy with small pebbles.
Combine milk and vinegar in a bowl or cup. Stir until mixed.
Add liquid ingredients to dry ingredients.
Gently combine until incorporated. (You may need to add more liquid or flour to make a ball)
Transfer dough to a floured surface.
Press down dough to approximately 2" thick.
Fold dough in half.
Repeat folding and pressing 5-6 times, adding additional flour if needed to be able to work the dough.
Press out dough until 1 1/2" thick.
Cut out biscuits using a biscuit cutter, ball jar ring, or glass (~3" in diameter)
Put biscuits in cast iron skillet (preferred) or on a cookie sheet.
