
Asian Lettuce Wraps / AIP
Perfect as a light meal, or as a summertime snack, these lettuce wraps are AIP compliant. Ground beef, pickled veg, and an AIP teriyaki sauce can be served on bibb or romaine lettuce. Loved by the entire family, each diner can enjoy the interactivity as they make their own wrap. Perfect for all ages.

Pickled Vegetables

- Julienne carrots, scallions, and daikon.
- Thinly slice garlic cloves.
- Place all vegetables into a non-reactive jar or bowl.
- Heat vinegar, water, sugar, and salt in a small saucepan.
- Bring to boil then remove from heat.
- Pour over vegetables.
- Allow mixture to cool.
- Move to refrigerator.
- Chill for minimum of 1 hour.
Sauce

- Add coconut aminos, orange juice, honey, ginger, and garlic to small saucepan.
- Bring to light simmer over low heat.
- Mix tapioca and water in small cup or bowl. Â
- Add tapioca and water to saucepan.
- Stir until incorporated.
- Turn up heat to medium.
- Simmer until desired thickness.
- Remove from heat.
Protein

- Heat avocado oil over medium heat in a 10" skillet.
- Add onions and garlic.
- Heat until onions are translucent, stirring frequently.
- Add ground beef.
- Cook until cooked through.
- Stir in water chestnuts.
- Remove from heat.

Serve all parts in separate bowls, allowing diners to build their own wrap.
Serve with bibb or romaine lettuce.
Add lime slices for flavor.
