Mashed Potato Substitutes

A significant number of people adopting the AIP diet report missing starches. Digging further, most of those say that potatoes are their biggest miss, and mashed potatoes are usually near the top of the list. As hard as this may seem, there are several AIP approved vegetables that easily and successfully mimic that creamy, starchy staple. Here are a few of our favorites:

Korean Radish:

These super radishes are by far our favorite mashie substitute. Nutritionally dense, easy to prepare, and low cost, these radishes have a taste and texture when cooked that is an almost perfect mashed potato.

Prepare by peeling, cubing, then boiling until fork tender. Completely drain all water (this is very important). Use a masher or mixer to bring to your prefered consistency. Use salt, garlic powder, and onion powder to taste.

The radish will not absorb liquid, so do not use ghee to butter this mash. You’ll end up with a pool of butter. Use coconut yogurt for a sour-cream vibe.

You can also use any other radish with the same overall effect. The Korean Radish is generally the best option because of cost per pound.

Turnip:

Turnips are another root veg that can mimic mashed potatoes. They have a slightly stronger taste than radishes, but boiling and seasoning will take out most of the bitterness. Preparing and cooking is the same as the radish family. These are a cost effective alternative to the radishes based on your shopping options and location.
