An AIP Approved sauce to replace traditional tomato sauce in appearance and in taste.

NoMato Sauce / AIP

Carrots, onions, and beets combine with savory herbs to make a "tomato" sauce that can be used over pasta. This sauce has the color, texture, and savoriness of a typical Italian tomato sauce while staying nightshade free. Used with AIP approved pasta, chicken, or pork, this is also a great base for many other soups and sauces.

Instructions

  1. Prep

    • Peel and cut onion into medium dice.
    • Cut carrots into 1/2" thick coins.
    • Peel and cut beet into medium dice.
  1. Cook

    • Heat dutch oven or sauce pan over medium heat.
    • After pot is hot, add oil.
    • Add in onions, beets, and carrots.
    • Saute until onions are translucent and carrots are fork tender (approximately 15 minutes),  stirring periodically.
    • Add garlic and continue sauteeing for 3 minutes.
    • Add water and lemon juice.
    • Remove from heat.
  1. Finish

    • Add salt and herbs.
    • Blend with immersion blender mainly smooth (slightly chunky).
      • Use regular blender if immersion blender isn't available.
