
Baking powder vs. baking soda. Baking frequently requires one or both. Both are used for leavening but unfortunately, both are not AIP compliant. Baking soda is a leavener that requires an added acid to work, while baking powder includes an acid. Baking powder also usually includes cornstarch, wheat starch, potato starch, of aluminum. Any of these will remove baking powder from the approved AIP list.
If your recipe calls for baking powder, try this alternative:
- 2 tbsp cream of tartar
- 1 tbsp arrowroot powder (or tapioca starch)
- 1 tbsp baking soda
Mix well and use as baking powder.
